Mediterranean Bowl

This is one of those meals that we always forget about, but then when we remember, we make it for several weeks straight. The recipe is also one that some people will love & some will hate me for—there aren’t a ton of measurements. It really comes down to personal preference. Either way, it’s delicious. It’s a great mix of fresh & cooked ingredients paired with the BEST tzatziki sauce. It’s super filling & satisfying, but also light at the same time.

Recipe

Serves: 2 bowls

Cook time: 30 minutes

Bowl Components

  • Radishes, thinly sliced
  • Lemon dill rice (or any other grain)
  • Cucumber, thinly sliced
  • Pickled red onion
  • Iceberg lettuce
  • Tzatziki
  • Vegan feta (personal favorites: Follow Your Heart feta crumbles or VioLife block of feta)
  • Fresh dill
  • Roasted veggies
  • Artichoke Hearts

Roasted Veggies

  • Chickpeas
    • 1 can chickpeas, drained and rinsed
    • 1 tsp salt
    • 1/2 tsp paprika
    • 1 tsp garlic powder
    • 1/2 tsp dried dill
    • 1/4 tsp cayenne
    • 1/4 tsp turmeric
    • dash of cinnamon
  • Radishes
    • handful of radishes, quartered
    • squeeze of lemon juice
    • 1 tsp olive oil
    • 1 1/2 tsp salt
  • Artichoke hearts

Directions

  • Preheat oven to 375-400º
  • Add quartered radishes to a bowl & toss with lemon juice, salt, and olive oil. Transfer to baking sheet
  • In the same bowl (we’re all about minimizing the dishes here), add chickpeas & toss with listed spices. Transfer to baking sheet
  • Optional: add artichokes to baking sheet
  • Place baking sheet in the oven to roast for ~30 minutes, tossing halfway through
  • While veggies are roasting, prepare all other bowl ingredients
  • Once the veggies are done, it’s time to assemble!
  • First add your lettuce, then rice, then all other toppings to follow. Finish with a big scoop of tzatziki on top, mix, & dig in!
