
The alfredo sauce in this is one of the very first recipes I ever created on my own, & it still stays as one of my favorites. I made this for my niece when she was 1 & she ate it all AND put it all over her face! I call that a hit! I love adding veggies to bulk up my pasta, so here is my 1/2 pasta 1/2 zoodle fettuccine alfredo.

Recipe
Serves: 1
Cook time: 15-20 minutes
Ingredients:
- 2oz of fettuccine
- 1/2 a large zucchini
- ~ 1/4 cup fresh parsley
- Olive oil
- Alfredo
- Salt & pepper to taste
Instructions:
- Cook pasta according to package, reserving some pasta water
- Spiralize (or slice in whatever way your heart desires) the zucchini
- Roughly chop parsley
- Heat a pan on low
- Once cooked, add pasta into the pan with a bit of olive oil to prevent sticking
- Add in as much alfredo as you want, I like 2-3 spoonfuls
- Add in pasta water until desired consistency is achieved
- Add in zucchini & mix until coated
- Season with flakey salt, pepper, & parsley
- Serve!
