Fettuccine Alfredo

The alfredo sauce in this is one of the very first recipes I ever created on my own, & it still stays as one of my favorites. I made this for my niece when she was 1 & she ate it all AND put it all over her face! I call that a hit! I love adding veggies to bulk up my pasta, so here is my 1/2 pasta 1/2 zoodle fettuccine alfredo.

Recipe

Serves: 1

Cook time: 15-20 minutes

Ingredients:

  • 2oz of fettuccine
  • 1/2 a large zucchini
  • ~ 1/4 cup fresh parsley
  • Olive oil
  • Alfredo
  • Salt & pepper to taste

Instructions:

  • Cook pasta according to package, reserving some pasta water
  • Spiralize (or slice in whatever way your heart desires) the zucchini
  • Roughly chop parsley
  • Heat a pan on low
  • Once cooked, add pasta into the pan with a bit of olive oil to prevent sticking
  • Add in as much alfredo as you want, I like 2-3 spoonfuls
  • Add in pasta water until desired consistency is achieved
  • Add in zucchini & mix until coated
  • Season with flakey salt, pepper, & parsley
  • Serve!
