
Everyone needs a guac recipe in their back pocket to pull out whenever needed, and here’s mine! I am guilty of finding recipes online but tweaking it or leaving out ingredients because I either don’t have it, don’t like it, or I’m just being lazy. But let me be very clear here…DO NOT SKIP THE POMEGRANATE!!! It makes all the difference and really sets it apart from your basic guac recipe. Pro tip–cover your left over guac with plastic wrap, but press the plastic wrap down so it’s touching the surface of the guac, and it will stay beautifully green and fresh for days!

Recipe
Serves: ~1 small bowl
Cook time: 5 minutes
Ingredients:
- 1 large avocado
- juice from 1 lime
- 1/4 cup red onion
- 1-2 garlic cloves
- 1 stem of cilantro
- 1/4 cup pomegranate seeds
- Salt & pepper to taste
Instructions:
- Finely dice (or mince) garlic
- Dice red onion
- Finely chop cilantro
- Add avocado to a bowl and mash
- Add in all ingredients and mix
- Top with a little extra lime, salt, and pomegranate seeds
- Use as a dip or add to nachos!
