
One of my favorite things is going to the farmers market and see what’s in season and new around me. This week I found this tiniest brussels sprouts and immediately thought: popcorn brussels sprouts, aka brussels sprouts so good you eat them like popcorn. The best part for me is there isn’t even any chopping! You absolutely don’t need tiny Brussels sprouts, it’s just more fun if you can find them. So simple. So good.

Recipe
Serves: 2 servings
Cook Time: 10-15 minutes
Ingredients:
- ~3 cups brussels sprouts
- 1 tbsp nutritional yeast
- 1 tsp onion powder
- 1/2 tbsp garlic powder
- 1 1/2 tbsp olive oil
- Juice from half a lemon
- Salt
- Pepper
- Red pepper flakes, to taste
Instructions:
- Boil brussels sprouts in salted water until soft, about 5 minutes
- Preheat air fryer to 400
- Drain water and pat Brussels sprouts dry
- Add sprouts to a bowl
- Add olive oil and seasonings, toss until well coated
- Place in air fryer for 7-10 minutes, tossing half way through
- Serve with your favorite dipping sauce!
