
I love desserts and sweet things. I love warm drinks (even though I never finish them). and I LOVE peppermint hot chocolate. If you live in LA and you know what Erewhon is, they had a probiotic peppermint hot chocolate for a while and I was obsessed…to say the least. BUT if you know Erewhon, you know that having an obsession with one of their products is anything but budget friendly. Alas, I made my own with a little twist to spice things up and ease the tummy a bit more. Enjoy!

Recipe
Serves: 8-10oz
Cook time: 5-10 minutes
Ingredients:
- peppermint tea bag
- 4oz hot water
- 4-6oz plant milk of choice (amount depends on how creamy you want it)
- Josu Cinnamon Vanilla Salt (use code NIKKI for 10% off)
- vegan marshmallows
- 1 1/2-2 tsp vegan hot chocolate mix (Lakanto drinking chocolate works best for this since it’s packed with probiotics, use code NIKKI for 15% off)
Instructions:
- Heat up water and add tea bag, allow to steep for 3-5 minutes depending on how strong you want the peppermint flavor
- Add tea, plant milk, and hot chocolate powder to a pot (I use a tiny milk pot/Turkish coffee pot) and mix thoroughly
- Place pot on stove over low-medium heat, stirring consistantly
- As it cooks, sprinkle in a dash of cinnamon vanilla salt
- Once heated and combined to your liking, pour into a mug
- Top with marshmallows and finish with more cinnamon vanilla salt
