Chia Jam

We all love a good PB&J right? Right. But in trying to clean up what I eat a bit I decided to check out the ingredients on the jelly I would buy…I was truly shocked. There tends to be an excess of added sugar, and just ingredients that aren’t needed in most pre-made jams or jellies. So what’d I do? Make it myself of course! With a little extra hit of fiber from the chia seeds.

Recipe

Serves: 12 oz

Cook time: 10 minutes

Ingredients:

  • 3 cups frozen berries (any berries will do, I did just raspberry this time!)
  • Squeeze of lemon juice
  • 2 tbsp chia seeds
  • 2-3 drops of stevia (or any sweetener of choice)

Instructions:

  • Add frozen berries to a sauce pan, heat on low-medium. Stir/mash berries frequently
  • As berries begin to break down, add sweetener and lemon juice
  • Add in chia seeds, mix well
  • Allow to cool then serve for a more jelly texture OR place in a blender and blend until smooth for a more jam-like texture
  • Enjoy with your favorite nut butter for a PB&J!
