Rice Crispy Treats, 3 Ways

A good ole classic rice crispy treat. What could be better? Don’t worry, I’ll tell you. Vegan rice crispy treats! Oh, and protein rice crispy treats! OH AND chocolate peanut butter protein rice crispy treats! I’ve recently been craving rice crispy treats sooooo much and I’ve yet to find any vegan ones…and I definitely haven’t found any that are “healthy”. Now am I claiming that these are the healthiest treat out there? No way. BUT I like to at least bulk up my treats with a few other nutrients – hence the dark chocolate, peanut butter, and protein additions. Now here’s the real question…which version are you making first?

Recipe

Serves: 12 rice crispy treats, cupcake size

Cook time: 10-15 minutes

Ingredients:

Instructions:

  • Divide butter, rice crispies, and marshmallows into 3 even parts
  • Lightly grease a muffin tin
  • Classic
    • Melt butter in a small pot over low-medium heat
    • Add in marshmallows. Mix until smooth
    • Add in rice crispies.
    • Turn off heat and mix until fully combined
    • Use an ice cream scooper to scoop even amount of the rice crispy mixture into the muffin tin. It should fill 4 spots
  • Protein
    • Melt butter in a small pot over low-medium heat
    • Add in marshmallows. Mix until smooth
    • Add in protein powder. Mix until well combined
    • Add in rice crispies.
    • Turn off heat and mix until fully combined
    • Use an ice cream scooper to scoop even amount of the rice crispy mixture into the muffin tin. It should fill 4 spots
  • Chocolate peanut butter protein
    • Melt butter in a small pot over low-medium heat
    • Add in marshmallows. Mix until smooth
    • Add in peanut butter. Mix until well combined
    • Add in protein powder. Mix until well combined
    • Add in rice crispies.
    • Turn off heat and mix until fully combined
    • In another small pan (or microwave if you have one), melt chocolate and coconut oil until smooth
    • Use an ice cream scooper to scoop even amount of the rice crispy mixture into the muffin tin. It should fill 4 spots
    • Use a spoon to coat each of the 4 rice crispy treats with a layer of chocolate
