
So this isn’t so much of a “recipe” as it is just a beautiful, delicious, food combination. This is my current breakfast OBSESSION!!! Like everyday for the past week, obsession. The sweet of the persimmon, with the tang of the pomegranate, and creamy cream cheese with the bite of the onion – just perfect!

Recipe
Serves: whatever your heart desires
Cook time: ~ 5 minutes
Ingredients:
- Sourdough bread (if you’re in the LA area – Hasi bread is the BEST!)
- Vegan cream cheese (Kitehill and Tofutti are my favorites)
- Fuyu persimmon
- Pomegranate
- Red onion
- Honey
- Flakey salt
Instructions:
- Toast bread
- Spread a thick layer of cream cheese on the toast
- Ideally using a mandolin, thinly slice persimmon and red onion
- Layer persimmon and onion on top of the toast
- Top with pomegranate, honey, and flakey salt
