Chia Pudding

I’m really not a huge breakfast person, & I’m one of those who will find one easy thing that I like and stick to it for weeks. This chia pudding falls into that category. It takes literally 5 minutes to make, you put it in the fridge, then you have it to add to cereal, smoothies, bowls, or to eat on its own all week!

Recipe

Serves: 1 small jar

Cook time: 5 minutes

Ingredients:

  • 3 1/2-4 tbsp chia seeds
  • 3/4 cup plant milk (I like macadamia milk from Milkadamia)
  • 1/4 cup canned coconut milk or coconut cream
  • Splash of vanilla extract
  • Optional: sweetener of choice

Directions:

  • Add all ingredients to a jar. Shake well.
  • Place in fridge, periodically shaking or mixing over the first hour to avoid big clumps
  • Leave in fridge until fully set
