Watermelon Salad

The perfect side or main salad for the summer! My favorite thing about this recipe is how customizable it is. It’s super simple on its own–but you can add just about anything. Some suggestions: avocado, radishes, chickpeas, tzatziki, or orzo.

Recipe

Serves: 1

Cook time: 10 minutes

Ingredients:

  • 1 1/4 cup watermelon, diced
  • 2 Persian cucumbers, diced
  • 1/4 cup red onion, diced
  • 1/3 cup walnuts, chopped
  • 1/3 cup vegan feta (best: follow your heart vegan feta crumbles)
  • Squeeze of lemon
  • 1/4 cup fresh dill, chopped
  • Drizzle of balsamic glaze
  • Salt and pepper to taste

Directions:

  • Chop and dice all ingredients and add to a bowl
  • Toss & serve!
