Vegan Cheese of Your Dreams

I call this the “vegan cheese of your dreams”…because it really is! So easy, so quick, so delicious, & so VERSATILE!! Really, it’s whatever you want it to be. Use it in crunch wraps, quesadillas, mac n cheese, grilled cheese, nachos, or whatever else your heart desires!

Recipe

Serves: ~30oz

Cook time: 5-10 minutes

Ingredients

  • 1 1/2 cups raw, unsalted cashews
  • 1/2 cup carrots
  • 1/3 cup nutritional yeast
  • 1/4 cup tapioca starch
  • 1 1/2 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/4 tsp ground mustard
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp turmeric
  • 1 1/2 cups water

Instructions:

  • Combine all ingredients in a blender. Blend until smooth
  • For a thicker texture (ie. quesadilla, grilled cheese, nachos), heat in a pot for 4-5 minutes, stirring consistently until thickened
