
I recently found out that I need to be gluten free, but I also don’t do well with most processed grains (even if they’re gluten free). What does that mean? The delicious chickpea “tuna” melt on sourdough that I used to love isn’t so easy anymore. BUT the crunch in this version of the snack in unbeatable! It pays a bit of an homage to one of my childhood comfort food favorites: tuna melt with American cheese and potato chips.

Recipe
Serves: 1
Cook Time: 5 minutes
Ingredients:
- Chickpea “tuna” salad
- Violife Mature Cheddar style slices OR American Sandwich Slices
- Rice cakes
Instructions:
- Spread chickpea “tuna” salad onto a rice cake
- Add one slice of cheese
- Put in air fryer or oven at about 250-275 degrees for 3-5 minutes until cheese is melted
