
Valentine’s (or Galentine’s if you prefer) Day is just around the corner, so of course I HAD to share this recipe. But let’s face it, you don’t need a holiday or any excuse to enjoy this deliciousness. With only 3 (mandatory) ingredients, these chocolate pomegranate bites come together so quickly! You can customize them with whatever toppings you want, too. Personal favorite toppings: Josu Cinnamon Vanilla Salt or coconut flakes.

Recipe
Serves: 24 small squares
Cook time: 10 minutes + freezing
Ingredients:
- ~1 medium pomegranate
- 1 1/2- 1 3/4 cups non-dairy chocolate chips (I love to use Hu or Lakanto)
- 1 tsp coconut oil
- *OPTIONAL TOPPINGS*
- Josu Cinnamon Vanilla Salt (Use code NIKKI for 10% off)
- Walnuts
- Pistachios
- Coconut flakes
- Flakey salt
- More pomegranate
Instructions:
*DISCLAIMER* I happen to have this silicone mini brownie tray, but you do NOT have to use that! You can use any container/baking tray that you would use for brownies, Rice Krispie treats, etc. Just make sure to line with parchment paper and cut or break into pieces at the end!
- De-seed your pomegranate
- Fill each square will equal amounts of pomegranate
- Add coconut oil and chocolate to a heat proof bowl
- Melt chocolate until smooth
- Pour chocolate into each square and smooth over with a spoon or small spatula so that the chocolate is distributed evenly
- Add toppings
- Place in the freezer to set for 4-6 hours, or overnight
- Once frozen, pop out each square, place in a freezer safe container, and store in the freezer
- Enjoy as dessert or a little pick me up through the day. Happy Valentine’s/Galentine’s day!
