
Ever get about 10 minutes away from finishing cooking a meal and realize there’s one component you really realllyyyyy want? Yeah, same here. More often than I’d like to admit. That’s where this recipe came from. I was making a big salad/roasted veggie bowl for dinner and right before we were about to start assembling the components, I decided I HAD to have pickled onions on it. So here’s a quick pickled onion recipe for your next dinner emergency! Just like most pickles, the longer it sits the better, but 10-15 minutes is all it really takes!

Recipe
Serves: 16oz jar
Cook Time: 20 minutes
Ingredients:
- Half a red onion
- 1/2-1 tsp sea salt
- 1/2 tsp maple syrup
- 1/3 cup white vinegar
- 1 cup Hot water
Instructions:
- Thinly slice red onion. If you have a mandolin, now’s your time to use it!
- Stuff onions in a 16oz jar
- Pour in vinegar, hot water, salt, and maple syrup
- Mix
- Once the jar cool slightly, place in the fridge for at least 10-15 minutes
- Add on top of everything! Salads, avocado toast, stir fry, anything!
