Plant Based Nachos

Ok guys, it’s time we all step up our nacho game. All you need are some veggies, beans, & guac to really bring your nachos to the next level. I will note that this is another recipe where the measurements are merely suggestions, so feel free to change it up and add as much or as little of everything as you’d like. This is such a quick & easy weeknight meal that everyone will love!

Recipe

Serves: 1 large baking sheet

Cook Time: 15-20 minutes

Ingredients:

  • 1 small:
    • yellow bell pepper
    • orange bell pepper
    • red bell pepper
    • yellow onion
  • Tortilla chips (for my gluten/grain free folks, Siete is the way to go)
  • ~ 1/2 cup of iceberg lettuce, shredded
  • 1/2 can of black beans, drained and rinsed
  • 1 1/2 cups vegan cheese of your dreams
  • 1/3 cup of corn
  • 1/2 cup sour cream
  • Juice from 1/2 a lime
  • Salt & pepper to taste
  • Guacamole

Instructions

  • Preheat oven to 250 and line a baking sheet (I like to use a silicone baking mat)
  • Dice onions and peppers, add to a bowl
  • Add corn to the bowl
  • Add lime juice, salt and pepper, and mix
  • Spread tortilla chips out on baking sheet
  • Pour cheese evenly over chips
  • Sprinkle veggies and black beans on top
  • Put baking sheet in oven for ~10 minutes, checking periodically
  • Once the cheese starts to glisten, it’s ready!
  • Remove from oven and add sour cream, guac, and lettuce
  • Serve on plates or eat right off the pan!
